Burdock made another appearance at my dinner table tonite…
This time I included the burdock in with a lightly steamed melange of carrot, green onion and arame seaweed. I drizzled the mix with some sesame oil and topped it with cilantro.
It’s an easy (lightly cooked & not cold) salad- Plant friend Jim McDonald gave me the inspiration for this mix (though his version may have been raw? I can’t remember).
Makes a nice accompaniment to a bowl of adzuki beans and rice.
Today’s lunch was such a deliciously nourishing soup. In my broth of nettle, red clover and oatstraw I added burdock, daikon, sweet potato, shitake and green onion.
Wonderfully green, wonderfully nutrient dense.
(And vegan, for those sorts…).
I snacked on a few smoked herring (not vegan) while the soup simmered.
Cold water, wild caught fish like herring is such a great source of essential Omega-3 fatty acids … So important!
And so Yum.
